Estrano is not kidding about the hot dog water. It’s an actual ingredient. The pop up is a collaboration with Comfy Pup at Club TeeGee which is located at 3210 Glendale Blvd, Los Angeles, CA 90039 . Comfy Pup is already open at 5 pm and is serving their Midwestern Comfort Food like the Hoosier fried pork tenderloin sandwich. At 8 pm, Estrano opens to do a collaboration called Chicago Style Tsukemen. This includes Sonora Flour Alkaline hand made noodles, with Kielbasa/Trotter broth aka Hotdog Water Dashi, yellow mustard, white onions, neon relish, pickle spear, green zebras, sport peppers, and celery salt. And a quail egg.
Estrano will also be serving Dan Dan Verde noodles: garlic chive Tagliatelle, pistachio tahini, emerald plum, and smoked Shiitakes. Reminder: all the noodles are hand pulled.
But for me, the most wanted dish is Estrano’s new Crunchwrap Supreme Lasagna. You read that right. Estrano’s lasagna dishes have been themed to the cheesy fast food of our decadant childhood dreams. I nearly lost my mind when I got the first version: the Juicy Lucy Lasagna, which was ketchup and mustard pasta, beef ragu, shoe string potato fries and “secret sauce”. Every bite was heaven. It was just like eating the best McDonald’s hamburger that you remember from childhood, except that it was a lasagna and it was a hundred times better. It was a hefty serving too.
So forget about Taco Bell taking over the world and becoming the only restaurant like in DEMOLITION MAN. You can get a tomatillo coconut sorbet at this popup instead and I guarantee it will be better and won’t put you in the bathroom for an hour afterwards.
